Delicious Veggie Pasta Mix


I made up this delicious pasta mix one night after Zumba. I was pretty exhausted but I wanted something warm (coz it was so cold) and healthy. As I'm a vego, there is no meat in these recipes but I am not vegan so there is cheese etc. The great thing about this recipe is you can use up leftover veggies and its kind of a slow cooker besides the cutting up....it looks after itself!


You do not need to use all the ingredients as this is a mix recipe, so make it to suit your needs :) Its like minestrone!


Makes: enough for 3-4 people I'd say


Ingredients:


1 x bag of mini shells pasta
2 x zucchinis, cut into small 50c pieces
3 x Carrots, peeled and cut into small 20c pieces
1 x big garlic clove, crushed
1 x pinch of chill pasta if you wish
1 x red capsicum, cut into 10c pieces
1 large handful of basil for seasoning
1 x large red onion, diced
1/2 cup of diced swiss brown mushrooms
2 x tomatoes, diced
At least 1 cup of Vege stock (home made or bought) I say at least 1 cup but you can change it so suit your desired taste...some people prefer little taste, some love the taste
2 x canned whole peeled tomatoes, crushed
pepper and salt
1 x cup of shredded colby, tasty or parmesan cheese (whichever is your favourite)


(if you have a meat eater in your family you could also add organic chicken or bacon to their bowl at the end if you wish)


Method:


1. Brown up the onions separately in some olive oil till slightly brown (2 mins) and remove from heat.


2. Put water on boil for pasta ( i don't add salt to my pasta as I find it does not stick and salt can make it taste gross plus its healthier! )


3. In a large ( I mean large) saucepan, place the vege stock, crushed canned tomatoes, zucchinis, tomatoes, capsicum, garlic, carrots, chilli paste if adding, mushrooms and the cooked onions. Let this cook away for 20 mins or so until the vegies are soft enough to put a fork through


4. Whilst the veggie mix is cooking, cook the shell pasta until soft and drain. Add this to the vegie mix and let it simmer for 5 mins. Add a little salt and pepper to taste


5. Finally, add chese whilst it is simmering and then turn it off. Serve into bowls with basil on top. Be careful, its always SO hot, but smells delicious!
